Cilantro Penne with Black Beans

1 package Cucina Fresca Cilantro Penne*
1 can black beans (rinsed)
1 each red bell pepper, seeded and diced
1 each yellow bell pepper, seeded and diced
1 each jalapeno pepper, seeded and diced
5 Tbl extra virgin olive oil
2 limes, juiced
to taste Salt and Pepper
1 avocado, peeled and sliced (garnish)
1 Tbl Tabasco (optional)


Cook penne; remove from heat, strain and cool under cold water.
Rinse black beans in cold water; strain and mix with penne in bowl.
Clean and seed peppers and jalapenos; add to penne.
Squeeze limes; add juice to penne.  
Salt and pepper, to taste.
Add Tabasco, if desired.
Mix together and serve with sliced avocado.


*If Cilantro Penne is unavailable our Organic Penne or Gluten Free Penne works great in this recipe.

Add In's - Toss with crabmeat, grilled chicken or sauteed shrimp.
